Fudge Cinnamon Brownies:

ingredients: 1/2 cup brown rice flour, 1/2 cup white rice flour, 1/2 cup potato starch, 1/4 cup rice bran, 1/4 cup rice polish, 1 cup sugar, 1 cup margarine, 7 tbsp. cocoa or carob powder, 1 cup water, 1/2 cup buttermilk, 2 eggs, 1 tsp. vanilla, 1 tsp. baking soda, 1 tsp. cinnamon, 1/2 cup chopped walnuts (optional), 1/2 cup coconut (optional).

Sift together flours and sugar into a bowl.

Mix together margarine, cocoa or carob, and water into a heavy saucepan. Bring to a boil over heat. Slowly pour mixture over flours and sugar into an electric mixer. Add buttermilk, eggs, vanilla, soda, and cinnamon. Mix well.

Spread into a greased 15 1/2" x 10 1/2" jelly roll pan. Bake at 400 degrees for 20 minutes, or until done.

Walnuts and coconut are optional, and are added after mixture is poured into baking pan by sprinkling on top. (I sometimes add 2 ripe bananas to the batter and mix them in to keep it moist and hold it together).
