



GF Donuts
Gf Donuts: Sift together 3x: 1 1/2 cups sweet rice flour 1/4 cup potato starch 1 tbsp. baking powder 1/2 tsp. Xanthan gum 1/4 tsp. salt 1/4 tsp. cinnamon 1/8 tsp. nutmeg 1/2 cup sugar Put about 2/3 of the flour mixture in a mixing bowl. Add: 1 1/2 tbsp. shortening 1 egg 1/2 cup milk (scant) Blend 1/2 min. on low speed, scraping the sides of the bowl constantly with a rubber spatula to ensure even mixture. Mix at medium speed for 2 min. Stir in remaining flour mixure. Mix until even. Preheat corn oil in a deep fryer to 375 degrees F. Make the dough into a ball. Roll out the dough ball until 1/2 inch thick on a smooth surface covered in rice flour and powdered sugar, using a coated rolling pin. Cut into desired shapes (rice flour donut cutter, other donut shapes). Fry 3" inch donuts 1 min. 20 sec. each side. Coat cooked donut in powdered sugar, chocolate or vanilla GF frosting, or other desired toppings. Using a pastry injector you can add your own GF fillings as well (GF cream, jelly). Fry donut holes (small balls cut out from center) 4 sec. per side. Coat as desired. (created and donated by Susan Mahood) |
