Waffles

Light Waffle: 1 cup cottage cheese, 6 eggs, 1/2 cup rice flour, 1/4 cup oil, 1/2 tsp. vanilla, 1/4 tsp. salt, 1/4 cup milk. Blend in blender on high until mixed. Pour in a preheated waffle maker.

This is good for strawberry shortcake as well as a light breakfast waffle. (donated by Vera Catuara)

Swedish Pancakes: (serves one) 2 tbsp. rice flour, 2tbsp potato starch, 1 tsp. sugar, 1/2 cup milk, 1 egg. Put all ingredients in bowl and beat with rotary beater. Heat 9" frying pan with 1 tsp. oil in the bottom. Pour thin layer of batter tipping pan so batter spreads evenly covering pan. Flip when underside browns. Serve with lingonberry sauce, apple slices, etc.

*for low cholesterol cooking, use 1/4 cup Egg Beaters instead of egg.
