GF Rice Krispies Treats

Once upon a time the Kellogg's brand of Rice Krispies was gluten-free, but at some point in time over the years they changed their recipe to include malt or a modified food starch that contains non-GF ingredients.

Do your own homework on which brands are safe today for this recipe. Many health food and GF suppliers (as well as grocers) carry multiple brands of Rice puffs/krispies/cereal.

Ingredients: 1/4 cup margarine or butter, 1 pkg. (10oz, about 40) regular marshmellows, or substitute 4 cups miniature marshmellows. 5 cups rice krispies cereal.

Melt margarine in large saucepan over low heat. Add marshmellows and stir until completely melted. Cook over low heat 3 minutes longer, stirring constantly. Remove from heat.

Add cereal. Stir until well coated.

Using buttered spatula or waxed paper, press mixture evenly into buttered 13 x 9" pan. Cut into squares after cool.

Note: best results are obtained when using fresh marshmellows.
