Dessert Rolls

Chocolate Roll: 5 eggs (separated), 1/2 cup sugar, 3 Tbsp. cocoa, 1 tsp. baking powder, 2 Tbsp. rice flour, 1 tsp. vanilla, 1 cup whipping cream (Sweetened and whipped).

Heat oven to 350 degrees. Line jelly roll pan or 9x13" pan with well greased waxed paper. Beat egg yolks until very thick and lemon colored. Gradually beat in sugar and beat until very light. Sfit cocoa, baking powder and rice flour together. Add gradually to the yolk mixture.

In another bowl, beat egg whites until stiff but not dry. Fold into yolk mixture. Pour into pan spreading into corners. Bake 15 minutes. Invert over clean dry tower from narrow end. Cool on wire rack. Unroll when cool and spread with whipped cream. May be frosted with a chocolate glaze or sprinkled with powdered sugar. (donated by: Gladys Johnson)

Real Cinnamon Rolls: 2 pkts. active dry yeast dissolved in 1 cup warm water (105 - 115 degrees) _ 1/2 tsp. sugar.

Add: 1 beaten egg, 2 Tbsp. oil, 2 pouches Dietary Specialties white bread mix (add gradually, must mix by hand at end). Knead on board or counter dusted with mix or rice flour 50x. Roll out dough on floured space with rolling pin (also floured) until about 1/2" thick. Spread with softened margarine. Sprinkle with mixture of 1/4 cup sugar & 2 tsp. cinnamon. Roll up. Slice roll into even sections. Place in buttered baking pan/dish with room to rise. Let rise about 30 minutes. Bake at 375 degrees for 20 - 25 min. Glaze when done baking. (donated by: Susan Mahood)

Nut Roll: 7 eggs, 6 Tbsp. sugar, 3/4 cup ground nuts. Heat oven to 350 degrees. Grease 15x10x1" jelly roll pan; line with waxed paper and then grease paper. Separate eggs. Beat yolks with electric mixer at least 10 minutes. Add sugar. Beat until smooth and creamy. Beat eggs until stiff. Fold into yolk mixture. Fold in nuts. Bake at 350 degrees for 30 - 35 min. or until cake pulls away from sides of pan. Let cake cool about 5 min.

Spread a towel on counter top and sprinkle with powdered sugar. Invert cake onto towel. Peel off paper. Make a cylinder out of another towel and place it at one end of cake.
