GF Stuffing

Corn Bread Stuffing: 1 lb. log sausage (Bob Evans or Jones are GF), 1/3 cup margarine (melted), 2 loaves fresh baked GF corn bread (see bread section), 1 Tbsp. poultry seasoning, 1 1/2 cups chopped (cut up) celery + 1/4 - 1/2 cup water.

Preheat oven to 350 degrees.

Brown sausage in pan on stovetop, chopping up finely as it cooks. Drain well and set aside.

Cut corn bread into small cubes. Set aside.

Combine melted margarine and poultry seasoning.

Put chopped celery and water in blender and blend until it becomes an attractive green mush :)

Pour margarine over bread cubes in large mixing bowl, followed by celery toss. Mix in the sausage well, mixing all ingredients together.

Bake for 45 - 60 minutes in a Casserole. Makes a yummy stuffing!
